With the holidays right around the corner, it only seemed appropriate to share a little gift with you all.
The Last Light is a cocktail that features our own whisky (more on that below!) and gets its namesake from watching the sunlight fade over the Canoe Glacier up at CMH Cariboos. Its glowing colours encapsulate those warm feelings you get after a day out in the hills, watching the light slowly fade from the mountains and knowing you get to do it all over again tomorrow. Tough to beat, eh?
What you’ll need:
- Alpenglow Whisky 1.25 oz (available to experience at CMH lodges. Otherwise, use your favourite at-home variety)
- Okanagan Spirits Bartlett Pear Brandy 0.5 oz
- St Germain 0.5 oz
- Lemon juice 1.5 oz
- Simple syrup 0.75 oz
- Honey 0.25 oz
- Hester Creek Syrah (just a touch!)
How you’ll do it:
- Add Alpenglow Whisky, Bartlett Pear Brandy, St Germain, lemon juice, simple syrup and honey to your shaker
- Add ice and shake it like a Polaroid picture
- Strain into coupe
- Float Hester Creek Syrah with bar spoon
Cocktail competitions at CMH
This cocktail was born out of the illustrious Golden Shaker Competition. This contest pits our lodge bar teams against each other, all aiming to create the most sensational cocktail.
But there was a catch.
As an additional challenge, the teams pulled their respective liquors out of a hat and had to conspire and create on the spot. Talented people, we tell you.
In the end, it was the Cariboos’ team who came out on top, and they dubbed their creation the Last Light.

Introducing CMH’s very own whisky
We did say we’d share some deets about our brand-new Alpenglow Whisky. We had the good fortune of getting to collaborate with our fine friends over at the award-winning Okanagan Spirits Distillery on this whisky, which is available to experience exclusively during a stay at a CMH lodge.
Now that it’s officially landed in lodges for your sipping pleasure this season, we figured we’d share some details.

Alpenglow inspired
“When day turns to dusk and the glow of last light tucks beneath the peaks, our lodges come to life. We gather tableside and fireside to raise our glasses to adventures just shared, and to welcome more ahead. It’s the moments between now and the next tale that our home becomes yours. The room hums with a warmth that lingers long into the evening, and all else is forgotten.
So, just as CMH’s earliest guides and caretakers did decades ago, toast today’s end and look forward to the next. Fill your glass with this rum barrel, double-wood CMH original single-malt whisky that swells with notes of caramelized plums, sticky pudding, cozy spices, and a toasted-oak finish. Crafted from 100% Canadian malted barley, this is one to sip slowly and savour.”
Happy holidays from the CMH team
We hope you’re nestled in tight with family and friends this holiday season. While the snow continues to fly across our lodges this December, we’re sending warm wishes to you all. May the new year bring love, light and copious amounts of that sweet, blower pow.
